Cook the rice in a saucepan according to the packet. Meanwhile julienne the carrots with a grater and mince the garlic on a cutting board with a santoku knife.

Brown the beef mince in a non-stick pan with the garlic. Deglaze with the soy sauce and maple syrup and let it glaze for 2 minutes. Set aside.

In the same pan, wilt the spinach with half the sesame oil, then fry the eggs sunny-side up.

Build the bowls: rice, then beef, spinach and carrot in separate piles, egg on top. Finish with the remaining sesame oil, sesame seeds and a spoon of chilli sauce. Stir everything together at the table.
