Instructions

Cut the chicken breast into large chunks on a cutting board with a santoku knife; season with salt, black pepper and half the lime juice. Dice the onion, garlic and green pepper.

Heat the olive oil in a Dutch oven over medium-high heat and brown the chicken on all sides, about 5 minutes. Add onion, garlic and pepper and soften for 3 minutes.

Stir in the tomato paste, pour in the water and add the olives. Cover and simmer on low for 25 minutes, stirring now and then with a wooden spoon, until the sauce is rich and the chicken tender. Add the dried oregano, a pinch of ground cumin and the bay leaves with the water; fish the bay leaves out before serving.

Meanwhile cook the rice in a saucepan according to the packet. Serve the stew over the rice with the remaining lime squeezed on top.
