Instructions

Dice the onion, garlic, chilli and tomatoes on a cutting board with a santoku knife.

Heat half the olive oil in a saucepan, soften onion, garlic and chilli for 3 minutes, add the tomatoes, season with salt and black pepper and simmer for 10 minutes. The ground cumin and dried oregano go in with the tomatoes.

Stir the kidney beans into the sauce and let them warm through for 3 minutes.

Fry the eggs sunny-side up in the remaining oil in a non-stick pan; warm the tortillas briefly in the same pan.

Layer tortilla, bean sauce and fried egg on each plate. Top with sliced avocado, parsley and a squeeze of lime juice.
Notes
For more heat, leave the seeds in the chilli or double the amount — the beans and avocado balance it well.
