Instructions

Dice the onion, garlic, carrots, celery, courgette and tomatoes on a cutting board with a santoku knife.

Sweat onion, garlic, carrot and celery in the olive oil in a large pot for 5 minutes, stirring with a wooden spoon. Add tomatoes and water, season with salt and black pepper and simmer for 15 minutes. The dried oregano and a pinch of dried thyme simmer along.

Add the wholemeal pasta, courgette and white beans and simmer for another 10 minutes until the pasta is al dente.

Serve with a ladle and tear the basil over the bowls.
