Instructions

Slice the chicken breast into strips on a cutting board with a santoku knife; season with salt and black pepper. Slice the red, green and yellow peppers, the onion and the chilli. Toss the chicken with the ground cumin, the paprika, the chili powder and the dried oregano too.

Heat the olive oil in a stainless-steel pan over high heat and sear the chicken for 4-5 minutes until browned. Add peppers, onion and chilli and stir-fry 5 more minutes — the vegetables should stay crisp.

Squeeze the lime juice over the pan. Warm the tortillas briefly, slice the avocado and let everyone roll their own fajitas at the table.
