Stir the quark with the finely chopped chives, a splash of lemon juice and black pepper in a mixing bowl. Fold in the chopped dill.

Slice the cucumber thinly on a cutting board and cut the rye bread with a bread knife if it is unsliced.

Spread the chive quark generously on the bread, layer the cucumber on top and finish with the smoked salmon.
