Instructions

Blend the tomatoes, red pepper, chilli, half the onion, the garlic and ginger to a smooth base in a blender.

Slice the remaining onion and fry it in half the olive oil in a large pot. Stir in the tomato paste for 2 minutes, pour in the blended base and cook it down for 10 minutes, stirring with a wooden spoon.

Add the rice, water, salt and black pepper. Cover tightly and simmer on the lowest heat for 25 minutes without lifting the lid; the slight scorching at the bottom is authentic. The dried thyme, the curry powder and the bay leaves go in with the rice.

Season the chicken breast, cut into strips on a cutting board with a santoku knife, and sear in the remaining oil in a stainless-steel pan, 3-4 minutes per side. Serve over the red rice.
