Instructions

Dice the sweet potato and finely chop the ginger and garlic on a cutting board with a santoku knife.

Toss sweet potato and chickpeas with ginger, garlic, most of the olive oil, salt and black pepper on a baking pan. Roast in the oven at 200 C for 30 minutes. The ground cumin, the turmeric and a pinch of cinnamon go on with the salt and pepper.

Pour boiling water over the couscous in a mixing bowl until just covered, cover and let it swell for 5 minutes, then fluff with a fork.

Serve the roasted vegetables on the couscous with the rocket, the lemon juice and the last of the oil.
