Cut the chicken breast into long strips on a cutting board with a santoku knife. Marinate in a mixing bowl with half the soy sauce, half the lime juice, the maple syrup and one crushed garlic clove for at least 15 minutes. The turmeric, the ground coriander seed and the ground cumin go into the marinade too.

Cook the rice in a saucepan. For the sauce, warm the peanut butter with a splash of water, the remaining soy sauce and lime, the second garlic clove and the chopped chilli, whisking with a whisk until smooth and pourable.

Thread the chicken onto skewers and grill in a hot grill pan for 3-4 minutes per side until charred and cooked through.

Slice the cucumber into chunky batons. Serve skewers over rice, pour the peanut sauce generously on top and add the cucumber alongside.
Notes
Marinating longer (up to overnight) deepens the flavour; 15 minutes is the working minimum.
