Instructions

Dice the onion, garlic, red pepper, chilli and tomatoes on a cutting board with a santoku knife.

Heat the olive oil in a sauté pan over medium heat and soften onion, garlic, pepper and chilli for 5 minutes. Stir in the tomato paste, then add the tomatoes, salt and black pepper and simmer for 12 minutes until thick. Season the sauce with the ground cumin and the paprika.

Make four wells in the sauce with a wooden spoon and crack one egg into each. Cover and cook gently for 6-8 minutes until the whites are set and the yolks still soft.

Scatter the parsley over the top and bring the pan straight to the table.
