Instructions

Cube the turkey breast on a cutting board with a santoku knife and pulse it in a food processor to a coarse mince. Knead with the egg, salt and black pepper and roll into walnut-sized meatballs.

Brown the meatballs in the olive oil in a sauté pan over medium-high heat, about 5 minutes, and set aside. Soften the diced onion and garlic in the same pan, stir in the tomato paste, then the chopped tomatoes, and simmer 10 minutes.

Return the meatballs to the sauce and simmer gently for 10 more minutes. Meanwhile cook the wholemeal pasta al dente in a large pot of salted water.

Serve the meatballs and sauce over the pasta, shower with grated parmesan and torn basil.
