Preheat the oven to 200 C (390 F).

Capers pickled, canned, drained

Instructions

Slice the potatoes thinly on a cutting board with a santoku knife, toss with half the olive oil, salt and black pepper in a casserole dish and bake in the oven at 200 C for 15 minutes.

Chop the tomatoes and garlic and mix with the olives and capers. Season the mixture with the paprika and the leaves of the thyme.

Lay the cod fillets on the potatoes, spoon the tomato-olive mixture over them, drizzle with the remaining oil and bake 18-20 more minutes until the fish flakes.

Finish with the lemon juice and parsley and serve straight from the dish.
