Boil the potatoes in a large pot until tender, about 15 minutes; blanch the green beans in the same water for the last 4 minutes. Drain everything.

For the sauce, finely chop the chilli and garlic on a cutting board with a santoku knife. Warm the peanut butter in a saucepan with a splash of water, chilli, garlic, soy sauce, maple syrup and lime juice, whisking with a whisk until pourable.

Slice the cucumber and halve the boiled eggs. Arrange potatoes, beans, cucumber, bean sprouts and eggs on two plates.

Pour the warm peanut sauce generously over everything and serve immediately.
