Coconut meat, grated, dried

Cashew butter (100 % pure)

Instructions

Blitz the dates, oat flakes, cashew butter and a pinch of salt in a food processor until the mixture clumps when pressed. A spoonful of water helps if it stays crumbly. Add a pinch each of cinnamon and cardamom.

Roll the mixture into walnut-sized balls with damp hands, then roll them through the grated coconut.

Chill for 30 minutes to firm up before eating.
Notes
Makes about 12 balls. They keep two weeks in an airtight box in the fridge and also freeze well.
